Spicy Beef Stir Fry

Stir fry is one of the easiest meal’s to whip up after a stressful day at work. I recently moved house, well 6 months ago, and forgot to bring my nice wok with me. Rage. I haven’t had the chance to pop up to Ikea in Dublin yet to replace it, so have been using a heavy duty pan for the time being for my Asian cooking. I miss my wok 😦

Ingredients (Serves 2)

Spicy Beef Marinade

  • 1 tbsp tobasco
  • 1/3 red onion
  • 1/8 cup brown sugar
  • 2 garlic cloves
  • 1/2 tbsp tomato ketchup
  • salt
  • pepper
  • 1/4 tbsp chilli flakes
  • 1 tbsp worcestershire sauve
  • 1 tbsp red wine vinegar
  • 1/4 tbsp ginger
  • 1 chilli

Mix all the ingredients with the beef in a zip lock bag. Allow to marinade for an hour, or preferably overnight.

Stir Fry

Firstly, cook your rice (or noodles if you prefer). I used wild and brown rice for a healthy option on this occasion. Two parts water to one part rice and I like to add a knob of butter during cooking for that added flavour. Fry some red pepper, green beans and onions briefly in a pan. Only cook very briefly to keep the vegetables crunchy. Sit to the side once cooked.

Meanwhile, fry off the spicy beef. The marinade will thicken as it cooks and act as a sauce.

And serve. Simples! 🙂
